- Add a few teaspoons of glycerin to your batter before baking your cake and you can store it longer. A little glycerin in the royal icing adds shine and keeps your icing from hardening and drying out. Royal icing becomes easier to apply.
- Prevent crystallization of sugar by adding glycerine when heating sugar and water to high temperatures. Glycerin also acts as a sweetener in fudge, truffle and caramel.
- Glycerin can prevent buttercream from drying out and forming a crust. Thanks to it, the buttercream retains its smooth and silky texture and makes it easier to fix the decorations or sprinkle them on your cakes.
- Improves the texture and flexibility of homemade sugar paste. It can also bring older, firmer sugar pastes back to life, just add a few drops of glycerin and stir into your sugar paste until smooth.
